Bleu Cheese Blues

Oh, rancid cheese, why do you tempt me so?
You call at me with bluish lines of mold.
Your piquant bite makes my saliva flow,
And my aversion soon begins to fold.

The scent and moldy texture you present
Invite me to include you when I dine.
I am enticed to let myself relent
To Bleu d'Auvergne and savor it with wine.

There is the Stilton, one that Britons prize,
And Gorgonzola spreads Italian pride.
I know a taste of these may seem unwise,
But why critique a cheese I haven't tried?

Despite the color of its moldy rind,
I crave to try your Roquefort’s pungent sting.
Its earthy scent has made me change my mind;
A bite of it will prompt my tongue to sing.
